These Italian inspired gluten free popovers are crispy on the outside, soft and airy on the inside, and loaded with savory, buttery flavor. Perfect for brunch, holidays, or just a dinner roll alternative! This is my original recipe, made to taste like a blend between classic popovers and a savory dinner roll
RECIPE: Italian Inspired Gluten Free Popovers
Ingredients
1 cup gluten free all purpose flour blend (must contain xanthan gum)
1 cup whole milk - warmed to 110 degrees F (or dairy-free milk for alternative)
3 large eggs (room temperature)
2 tbsp butter melted
1/4 tsp salt
1 tsp garlic powder
1/4 tsp dry rosemary chopped fine (or fresh)
6 tbsp butter cubed and halved for muffin tin
Instructions
Preheat oven to 425°F
Place 6 tbsp cubed butter divided evenly in a muffin tin or popover pan
Warm milk slightly (110 degrees F).
In a bowl, whisk eggs, milk, and butter until blended.
Add flour, salt, garlic powder, and rosemary. Mix until smooth.
Divide batter evenly into cups, filling approximately 1/3 full.
Bake 20 minutes without opening the oven, this helps them rise!
Reduce heat to 350°F and bake another 15-20 minutes until golden and crisp.
