Polish Apple Cake
For the filling
10 - 12 small tart and fresh apples
2 heaping tablespoons of brown sugar
cinnamon to taste (I used about a tablespoon or less)
Peel, core and slice the apples. Cook in a medium pot on about medium heat until softened and still hold a bit of its shape. Cool the filling slightly.
For the pastry
2 and 1/2 cups of cake and pastry flour
1 teaspoon of baking powder
3/4 cup of salted butter
1/4 cup of sugar
2 eggs
2-3 tablespoons of sour cream
Blend the flour, baking powder and sugar together and cut in the butter as shown or with two knives. You can also work in the butter with your fingers. Add the eggs and beat it in the center of the flour. Then incorporate with the flour. Add the sour cream. The texture should be a bit shaggy but still wet. Form into a ball and place in the freezer for one hour to harden so that it is easy to grate.
Butter an 8 x 8 inch baking pan and grate half of the pastry on the bottom. Add all the apple filling on top and then grate the remainder of the pastry over the top.
bake in a 350℉ oven for 45 - 50 minutes or until beautifully golden on the top. Allow to cool and sprinkle powdered sugar over top and serve. It goes really great with vanilla ice cream or simply on its' own!
