TRADITIONAL SCOTTISH STEW: STEWED BEEF & PORK SAUSAGE RECIPE

Ingredients
oil
400-500g cubed / diced beef
salt & pepper
2 x tsp red vinegar
3 x sticks celery
2 x carrots
1 x onion
1 x tsp mixed herbs
2 x tsp Dijon mustard
4-6 x pork link sausages
2 x tbsp plain flour
1 x tbsp Worcestershire sauce
2 x beef stock cubes (in 1.5-2 litres water)
bisto gravy granules (optional)
Method
1. Brown off cubed beef in pot with oil, salt & pepper - remove and place on plate to be added again later
2. De glaze pan with vinegar
3. Add chopped celery, carrot & onion with more oil if required
4. Add mixed herbs and dijon mustard and cook until veg softens
5. Once veg has softened, add flour (this will help to thicken the sauce), Worcestershire sauce, the pre-cooked cubed beef and pierced pork sausages into pot
6. Add stock pots dissolved in approx 1-1.5L water (dependant on how much gravy you like you can add more throughout the cook time) and simmer on medium heat for 45mins before stirring/checking
7. Continue cooking until stew has been cooking for between 1.5-2hrs total
8. Stir through bisto gravy granules if wanted, but not necessary - enjoy!
