These shin beef kebabs are a perfect blend of tender, slow-cooked beef and bold, smoky flavours. The meat, cooked to melt-in-your-mouth tenderness in a pressure cooker, is then finished in a hot pan, giving it a beautifully charred exterior. Each skewer holds succulent cubes of beef paired with vibrant, lightly charred onions and peppers that add a fresh, sweet contrast to the rich meat. The deep flavours of the marinade, with notes of cumin, paprika, and a hint of heat, soak into every bite. Served alongside a smoky chipotle dip, these kebabs are a hearty, flavorful dish that perfectly balances tenderness and crisp, charred edges.

In the UK, shin beef comes from the lower leg of the cow, typically a cut from either the front (foreshank) or the back (hind shank). It's known for being a tough cut with lots of connective tissue, which makes it ideal for slow cooking as the collagen breaks down into gelatin, giving dishes like stews and braises a rich, hearty texture.

In the USA, shin beef is usually referred to as beef shank. When sliced with the bone in, it might also be labelled as shank cross-cut. Like shin beef in the UK, beef shank is valued for slow-cooked dishes such as soups and stews.

Ingredients
1.5 kilos Shin Beef
Onion Diced
Capsicum or bell peppers diced
Any veg you like

Spice Mix/Marinade:
2 tsp ground cumin
1 tsp smoked paprika
1 tsp ground coriander
1/2 tsp ground cinnamon (for a hint of warmth)
1/2 tsp ground black pepper
1/4 tsp cayenne pepper (optional, for heat)
2-3 cloves garlic, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp soy sauce or tamari (for umami)
1 tsp fresh or dried thyme (or rosemary)
1 tbsp honey or sugar (optional, for a balance of sweetness)
Marinade 2-4 hrs or overnight

Cholula Chipotle sauce:

Smoky Chipotle Dip:
1/2 cup sour cream or Greek yoghurt
1/4 cup mayonnaise
2-3 tbsp Cholula Chipotle sauce (adjust for spice level) https://amzn.to/3Y7QhL4
1 tsp lime juice
1 clove garlic, minced
1 tsp smoked paprika (optional for extra smokiness)
Salt and pepper, to taste
1 tbsp fresh cilantro, chopped (optional)
