INGREDIENTS:
200 g (about 1 cup) cottage cheese
65 g (about ¾ cup) oats
½ tsp baking powder
1 egg (save a little yolk for brushing the crust)
1 large or 2 small nectarines (apples, pears, or figs also work)
about 2 tbsp hard cheese (optional)
Sweetener to taste (sugar-free vanilla, honey, or maple syrup)
A pinch of thyme for serving
