Learn how to make QUICK, EASY and DELICIOUS Specific Carbohydrate Diet friendly Guacamole! You will fall in love with this amazing recipe. Pairs well with any BBQ-ed meat, as a dip or as a salad topper!
HOMEMADE SCD GUACAMOLE:
-2 ripe avocados
-1 medium size lime (or lemon)
-1 medium size Roma tomato, diced (or about 7 cherry/grape tomatoes, diced)
-1/2 of medium size red onion, diced (they taste sweeter raw)
-2 cloves of garlic, minced
-1 tsp dried Cilantro
-1/2 tsp of ground Cayenne pepper (or you can use fresh hot pepper)
-pink Himalayan salt to taste
-ground pepper to taste
This recipe is best eaten right away. You can also place it in the refrigerator for about 1 hour before eating. The finer you chop your tomatoes and onions, the smoother the guacamole will be. You can also place all your ingredients into a food processor (if you have one handy, I don't) as that will also make the texture of the guacamole smoother.
