The proper way of making traditional Scottish Stovies.
Stovies are traditionally a peasant’s dish made without meat, served with Oatcakes, Pickled Beetroot and a glass of ice cold full fat milk.
They’re a very cheap, fulfilling, tasty and nutritious dish.
This is the traditional recipe, not using mashed potatoes, leftovers or any gravy or stock.
Proper Stovies are not made with Sausages and are most definitely not made with Corned Beef.... that’s Corned Beef Hash.
Recipe is as follows;
500g Back Vein of Beef, diced.
8 Potatoes, peeled, chopped into 2cm dice and soaked
3 Medium Sized White Onions, peeled, chopped into 2cm dice
25g (roughly 1 tablespoon) Beef Dripping (hard beef fat)
Salt and pepper to taste.
NOTE
Do not use Rooster Potatoes or Baking Potatoes! Use a relatively firm, floury potato like a Maris Piper, Golden Wonder, Pink Fir Apple or Kerr’s Pink.
