Recipe:
1 lb lasagne noodles (preferably organic whole wheat or organic gluten free)
37-38 oz vegan pasta sauce (basically 1+1/2 jars)
3 TBS Olive oil
1 cup sweet onion, chopped
1 cup zucchini, chopped
1 cup yellow squash, chopped
4-5 garlic cloves, minced
2 cups mushrooms, chopped (white or baby-bellas)
1 cup frozen chopped spinach
1/3-1/2 cup “Just Egg” (vegan egg)
14 oz vegan sausage or vegan beef crumbles (brands we like: Impossible, Beyond, Gardein)
2 cups vegan mozzarella shreds (brands we like: SoDelicous, Dayia, Miyoko’s, Follow Your Heart)
1 cup vegan parmesan (Follow Your Heart is the best)
8 oz vegan ricotta (Kite Hill is the best)
1 handful fresh basil, chopped
Spices: onion powder, garlic powder, Italian seasoning (red pepper flakes & black pepper to taste)
** Veggies can be omitted or substituted for anything you like (fresh tomatoes, broccoli, cauliflower, bell peppers, etc)
To make:
cook pasta to al dente and sit it in cold water until needed.
Heat oil in a large skillet and sauté onion, garlic, squash, zucchini & mushrooms
Season with all dried spices by dusting top about 2-4 tsp each *except for black and red pepper are to taste depending on how spicy you like it.
cook 5-8 mins on high stirring often until tender-firm
Make vegan ricotta mixture w/ Just Egg, frozen spinach and dusting of all spices
add vegan meat crumble to veggies in pan and cook until browned
spray a large pan
add a sheer layer of pasta sauce to bottom of pan
cover w/ layer of noodles
spread 1/2 vegan ricotta mixture
spread 1/2 veggie & vegan meat mixture
spread 1/3 of vegan mozzarella and vegan parm
add sauce
repeat
add chopped basil
add final pasta layer, then sauce, then vegan cheeses, dust with seasonings
bake at 400 for 20 mins til pasta edges are browned & vegan cheese is melted’ish
