Ingredients
Top round roast
Salt
Pepper
Garlic powder
Directions
Step 1
Remove all silver skin and fat from roast
Step 2
Place roast onto a cookie sheet with wire rack and heavily salted on all sides and place into the refrigerator for 24 hours uncovered
Step 3
After 24 hours remove the roast from the refrigerator and pat dry
Step 4
Now you’re going to heavily season your roast with pepper and garlic powder all sides
Step 5
In a skillet add about a couple of tablespoons of oil and get it nice and hot
Step 6
Now I am going to completely sear on all sides until it has a nice color
Step 7
Once you have reached the desired color remove the roast from the skillet place back onto the wide rack for about 30 min to cool down slightly
Step 8
At this time, set your smoker to 250°
Step 9
Place your roast into the middle rack of your smoker and cook it until the internal temperature reaches at least 125 to 130° for medium well if you like it well done cook it to 165° or well done
Step 10
Once you roast have reached your desired temperature remove it from the smoker place onto a piece of a heavy duty, aluminum foil, and wrap it tightly and let it rest at least for one hour
Step 11
After one hour, it’s time to cut into the roast and enjoy
