Ingredients
1 Flank steak butterfly
2 bell peppers diced
1 onion diced
Feta cheese or any cheese you like
Salt and pepper or any seasoning that you like
Directions
Butterfly your flank steak try not to put any holes in the meat
Lay a generous amount of feta cheese on top of the flank steak
Mix your diced bell peppers and your onions together and lay a generous amount on top of the cheese
Now it’s time to roll like you were rolling a burrito tightly
Using your favorite seasoning you’re going to season the outside of your flank steak
Using Butcher twine, you’re going to tie the flank steak, so none of the filling falls out
Now that everything is all tied up wrap your flank steak in some plastic wrap, place into refrigerator overnight
After 24 hours your flank steak from the plastic wrap and let sit at room temperature
Fire up your smoker about 250° and smoke your flank steak until the internal temperature reaches 150°
When the temperature reaches 150° remove to an open flame on a grill and sear your flank steak off
Once you receive the desired color, remove from grill and cover with some aluminum foil and let’s stand for about 10 to 15 minutes before you cut into it
