This raspberry pie is bursting with flavor! Super creamy, soft in structure, fluffy and so easy to make! There is always room for that after dinner!
Ingredients:
3.6oz (100 g) raspberries
1tsp (5 g) flour
cake batter:
4 eggs
3/4 cup (150 g) granulated sugar
3/4 cup (160 ml) sunflower oil or vegetable oil or olive oil (light)
1/2 cup (120 ml) buttermilk or kefir
20 ml lemon juice, from 1 small lemon
1 1/2 cups (210 g) flour
1 tsp (10 g) baking powder
Cream:
1.7oz (50 g) butter, soft
7.1oz (200 g) cream cheese, room temperature
1.8oz (50 g) powdered sugar
7.1oz (200 g) white chocolate
garnish:
raspberries
Pistachios
