Easy Upside Down Cookies | Stranger Things Inspired Red Velvet Cookies
Inspired by the iconic Upside Down from Stranger Things, these cookies are soft, chocolaty, and perfect for decorating with a sweet cocoa-sugar topping!
Ingredients:
Cookie Dough:
• 1 egg
• 60g butter
• 100g sugar
• 4g cocoa powder
• 130g flour
• 1 tsp baking powder
• ¼ tsp baking soda
• ¼ tsp salt
• ½ tsp vanilla
• 1 tsp lemon juice or white vinegar
• ¼ tsp red gel food coloring
Topping:
• 100g sugar
• 70g powdered sugar
• 15g cocoa powder
Instructions:
1. Mix butter and sugar until smooth. Add egg, vanilla, lemon juice, and red coloring, then mix again.
2. Sift flour, cocoa, baking powder, baking soda, and salt over the mixture. Fold gently until combined.
3. Cover and refrigerate dough for 1 hour.
4. Mix powdered sugar and cocoa for the topping.
5. Shape dough into 40–50g balls. Roll in sugar, then in the cocoa–powdered sugar mix.
6. Place balls on a baking tray with space between them. Optionally sprinkle extra sugar on top.
7. Bake in a preheated oven until done.
8. Use a cookie cutter to shape while hot.
9. Once cooled, remove cookies and arrange on a serving plate.
