Ingredients for Dragon Chicken Recipe:
(Tsp-Teaspoon; Tbsp-Tablespoon)
Boneless thighs cut into 1 “ pieces -450 gms
For Batter Coating:
Crushed black peppercorns -1 tsp
Red Chilli flakes-1 tsp
Salt-1 tsp
Fine chopped ginger-1 tbsp
Garlic, fine sliced/julienned -1 tbsp
Cornflour (corn starch)- 2.5 tbsp
All purpose flour- 2.5 tbsp
Egg, whisked- 1
Oil-1 tbsp
Tempering:
Garlic, fine chopped- 2 tbsp
Ginger, fine chopped- 1 tbsp
Green chillies, chopped-1 tbsp ( 2 nos)
Sauce:
Tomato Ketchup- 4 tbsp
Red Chilli Sauce- 2.5 tbsp
Dark Soy Sauce-1 tsp
Veggies:
Green bell pepper (capsicum)-cut into longish petals - 1 medium (75 gms)
Red bell pepper (capsicum)- cut into longish petals -1 medium (75 gms)
Yellow bell pepper (capsicum)-cut into longish petals -1 medium (75 gms)
Other Ingredients:
Oil-3 tbsp + oil for deep frying
Crushed peppercorns- 1/2 tsp
Salt- pinch for seasoning
Coriander leaves, fine chopped - 3 tbsp
Preparation:
Cut the thigh boneless fillets into small pieces
Peel and fine chop the ginger. Also slice and julienne the garlic.
Now add all the ingredients for the batter. Mix and set aside for around 30 mins.
For the stir frying, fine chop the ginger and garlic.
Slice the red, green and yellow bell peppers. Also fine chop the coriander leaves to be used as garnish.
Process:
Heat oil in a pan for deep frying.
Drop the battered chicken pieces in hot oil side by side. Do not stir for a minute.
Stir and fry on medium heat for 6-7 mins till light brown in color.
Fry the rest in batches.
Heat oil in a wok and then add the chopped garlic, ginger and green chillies.
Give a stir and fry for around 30 secs Now add the sliced colored bell peppers. Add a pinch of salt and 1/2 tsp of crushed peppercorns.
Mix and stir fry for around 2 mins till the peppers are little soft and then add all the sauces.
Give a mix for a minute and then add the fried chicken pieces.
Mix and stir fry on high heat for around 2 mins till the sauce coats the pieces completely but is still crisp.
Lastly garnish with chopped coriander leaves.
