🍪 Shanelle’s Molasses Cookies
Ingredients:
2.5 cups fresh milled or whole grain flour (I used kamut)
1 tsp. baking soda
1 tsp. ground cinnamon
2 tsp pumpkin pie spice blend (without fillers)
1/2 tsp. salt
1/2 cup butter, softened
3/4 cup coconut sugar, brown sugar, or date sugar
3/4 cup (240g) organic blackstrap molasses
1 large eggs
coarse sugar for rolling (optional)
Combine all dry ingredients.
Mix sugar, butter and molasses, add in egg.
Add the flour/dry ingredients to the butter mixture until just combined, don’t over-mix.
Cover the bowl and refrigerate for 4 hours or overnight
After the dough has chilled, preheat oven to 375* F. and line a baking sheet with parchment
Make 24 cookies with your dough
Bake for 11-13 minutes (might be less on a metal pan, I use stone pans)
⭐️ Eating 2 cookies is 3mg non-heme iron. Consume with vitamin c rich foods (and avoid calcium rich foods) to aid absorption of iron.
