Kale Apple Salad

For the salad:
1.25 Lb Lacinato (aka Tuscan) Kale, stemmed, and sliced
1/2 small red onion, thinly sliced
1 apple, cut into julienne
1/4 cup chopped walnuts or pecans
1/4 cup dried cherries or cranberries
Mix everything together with the dressing and salt. Squeeze with your hands aggressively, taste and correct for salt. Ideally, let it sit for 20 min before serving. Can be made several hours ahead and refrigerated.
For the dressing:
1 Tbsp apple cider vinegar
1 Tbsp Dijon mustard
3 Tbsp olive oil
1/4 cup Greek Yogurt (optional)
1 Tbsp whole grain Dijon mustard (optional)
In a small bowl, thoroughly mix the vinegar, dijon mustard and salt. Gradually whisk in the oil. Whisk in the yogurt and whole grain mustard.
