Today I’m making a rich and juicy eggplant & pork sauce, perfect for mixing with noodles.
This sauce is deeply savory, full of flavor, and incredibly satisfying. Let’s make it step by step.
🥄 Step 1: Prep the eggplant
Cut the eggplant into small cubes.
Add salt and let it sit for 15 minutes to draw out excess moisture.
After that, squeeze out the water and set aside.
🧅 Step 2: Prepare the aromatics
Dice half an onion.
Finely chop a few cloves of garlic.
Prepare a cornstarch slurry:
2 tablespoons cornstarch + 4 tablespoons water, mix well.
🍳 Step 3: Cook the base
Heat 4 tablespoons of oil in a pan.
Add the diced onion and sauté until golden and slightly caramelized — this adds extra depth of flavor.
Add the ground pork and stir-fry until the moisture cooks off and the meat becomes fragrant.
🍆 Step 4: Build the sauce
Add the eggplant and stir-fry briefly.
Then add:
1 tablespoon sweet bean sauce
1 tablespoon chili bean paste (doubanjiang)
Stir well, then season with:
2 g sugar
2 tablespoons soy sauce
1 teaspoon dark soy sauce
Mix until everything is evenly coated and glossy.
Finally, add the chopped garlic and green onions.
Stir-fry until fragrant.
👉 The eggplant & pork sauce is now ready!
🍜 Step 5: Cook and mix the noodles
Cook the noodles until just tender.
Drain well, then mix them with the freshly made eggplant pork sauce.
