🍫 Chocolate Tart Recipe – Crispy Crust, Rich Ganache & Shiny Glaze
This recipe creates a perfectly crisp tart crust filled with smooth chocolate ganache and finished with a glossy chocolate glaze. Follow the steps below for a flawless chocolate tart.
📝 Ingredients
1. Tart Crust
• 60g butter (room temperature)
• 50g powdered sugar
• 25g egg
• 120g cake flour
or 100g cake flour + 20g almond powder for a richer flavor
• Chill dough for 3 hours
2. Chocolate Ganache
• 110ml heavy cream
• 40ml milk
• Corn syrup
• Chocolate: 150g dark/milk chocolate + 100g dark chocolate
3. Chocolate Glaze
• 30g heavy cream
• Corn syrup
• Gelatin sheet (softened in cold water)
• 100g dark chocolate
👩🍳 Instructions
1. Make the Tart Crust
• Cream the butter.
• Add powdered sugar and mix well.
• Add the egg and combine.
• Add cake flour (and almond powder if using) and bring the dough together.
• Wrap and chill for 3 hours.
2. Shape the Tart Shell
• Roll the dough to 3mm thickness.
• Chill briefly.
• Fit the dough into the tart pan and press gently into shape.
3. Blind-Bake the Crust
• Prick the bottom with a fork.
• Line with parchment and fill with pie weights (rice or beans also work).
• Bake at 185°C (365°F) for 15–20 minutes.
4. Second Bake & Egg Wash
• Remove the weights.
• Bake again at 165–170°C (330–340°F) for about 10 minutes.
• Brush lightly with egg wash.
5. Make the Chocolate Ganache
• Heat heavy cream, milk, and corn syrup until just before boiling.
• Pour the hot mixture into the chocolate in 2–3 additions.
• Mix until completely melted and smooth.
6. Fill the Tart
• Let the ganache cool to room temperature.
• Pour into the baked tart shell.
• Tap gently to remove bubbles.
• Chill for 2 hours to set.
7. Make & Apply the Chocolate Glaze
• Heat heavy cream and corn syrup until just before boiling.
• Add softened gelatin and mix well.
• Stir in chocolate until smooth.
• Pour the glaze over the chilled tart and spread evenly.
• Tap gently to remove bubbles.
• Finish with gold leaf or gold dust.
8. Done!
• Slice and enjoy your rich, glossy chocolate tart.
