* the video says to preheat the oven to and bake the galette at 400°F/200°C but the correct temperature is 375°F/190°C (time remains the same)*
INGREDIENTS
*cup measurements are just here for reference but I highly recommend measuring based on weight for more accurate results
⇒ Pie crust:
195 g (1 1/2 cups) all-purpose flour
20 g (1 1/2 tbsp) white granulated sugar
2 g (1/2 tsp) salt
1/2 tsp ground nutmeg
115 g (1/2 cup) cold unsalted butter, cubed
60 g (1/4 cup) ice water
⇒ Pistachio frangipane:
25 g (2 tbsp) white granulated sugar
70 g (1/2 cup) ground pistachios
20 g (2 tbsp) all-purpose flour
40 g (3 tbsp) soften unsalted butter
30 g (½) beaten egg
Pinch of salt
⇒ Peach filling:
4 peaches
15 g (1 tbsp) freshly squeezed lemon juice
12 g (1 tbsp) white granulated sugar (adjust based on ripeness of peaches)
10 g (1 tbsp) all purpose-flour
Pinch of salt
⇒ Additional ingredients:
Beaten egg (left over from frangipane)
15 g (1 tbsp) milk
Fresh raspberries
Crushed pistachios

⇒ 派皮:
195克 (1 1/2 杯) 中筋面粉
20克 (1 1/2大勺) 白糖
2克 (1/2小勺) 盐
1/2小勺 豆蔻粉
115克 (1/2杯) 冷黄油,切小块
60克 (1/4杯) 冰水
⇒ 开心果馅:
25克 (2大勺) 白糖
70克 (1/2杯) 开心果粉
20克 (2大勺) 中筋面粉
40克 (3大勺) 软化黄油
30克 (½个) 打散的鸡蛋
少许盐
⇒ 桃子馅:
4个 桃子
15克 (1大勺) 鲜榨柠檬汁
12克 (1大勺) 白糖 (依据桃子的成熟度调整)
10克 (1大勺) 中筋面粉
少许盐
⇒ 其余的食材:
打散的鸡蛋(开心果馅料剩余的)
15克 (1大勺) 牛奶
