Sour Dough Leaven
Yield :
Ingredients
25 grams Mature Starter
50 grams Whole Wheat Flour
50 grams All Purpose Flour
100 grams Room Temperature Water
Method
1. Add the flours and water to the starter and mix well.
2. Cover lightly with the lid or plastic wrap with a little space open and leave on the counter for 6 hours until doubled in size.
3. Drop a teaspoon of the leaven into a bowl of water and if it floats the leaven is ready to be used.
