Sabudana Fries are a fantastic, crispy, and typically fasting-friendly snack. They are essentially a twist on sabudana vada, shaped into crunchy finger-food.

1 cup soaked sabudana
1/2 cup varai flour
boiled potatoes
peanut powder
salt
green chilies
1 tsp sugar
1 tsp leamon juice

Instructions:
1. Mix: In a large bowl, combine soaked sabudana, grated boiled potatoes, coarsely crushed peanut powder, chopped green chilies, rock salt, varai flour
2. Knead: Mix all the ingredients well and knead them to form a firm, non-sticky dough.
3. Shape the Fries
Flatten: Lightly grease your hands or a flat surface with a few drops of oil/ghee. Take a portion of the dough and roll it into a thick log.
4. Cook the Fries
Deep Frying (Most Recommended for Crispy Finish):
Heat oil/ghee in a kadai (deep pan) over medium heat.
Test the oil temperature by dropping a tiny piece of dough; it should sizzle and rise immediately.
Gently slide the shaped fries into the hot oil. Do not overcrowd the pan.
Fry until they turn golden brown and crispy on all sides (about 3-4 minutes).
Remove and drain excess oil on absorbent paper.
5. Serve the Sabudana Fries immediately while hot and crispy with a Vrat-Friendly Green Chutney (made from coriander, green chilies, a little ginger, and rock salt) or a side of plain yogurt (dahi).
