The humble pork steak is the epitome of Hill Country/Direct Heat BBQ! Pork steaks are cut from the shoulder of the pig (aka the pork butt) and are commonly cooked over hot coals. The fat from the pork steaks drips onto the hot coals and creates a fat smoke flavor unlike any of that in bbq. However, if you don't have a direct heat cooker the next best way to cook pork steaks is the reverse sear method. Smoke off these thick cut steaks between 225-250F for a few hours until they reach about 180 degrees F internal then sear them off however you would like to! Whether you sear over coals, or in a pan with butter, garlic, rosemary and thyme, these pork steaks sliced beautifully and are definitely NOT HORSIN AROUND!
