Caring for an aging parent at home can make things a bit more complicated in the kitchen. Especially when your elder loved one requires different dietary restrictions from the rest of the family.
My partner and I are caregivers for her elderly mom and she requires soft and lower sodium food. I definitely don't want that to mean bland and boring food though. So I work hard to make sure her meals are nutrient dense, soft enough for her to chew, and lower in sodium (for her that's 1,500 mg per day)...but also delicious.
Feeding a multigenerational home almost every meal at home is a lot of work. So I got smart and started to ingredient prep at the beginning of the week. Kind of like meal prepping, but instead of repeating the same meal all week...I prep ingredients...kind of like. a restaurant. That way I can mix and match the prepped ingredients to create a variety of delicious meals all week long.
So here is how I make 2 healthy, easy meals for a senior using prepped ingredients!
