Dinners from the Pantry

After a busy summer of canning, drying, and freezing food from the garden, it's time to eat from our food stores. I'm working through the food in our pantry and freezer by doing a modified version of the #threeriverschallenge, giving myself a grocery budget of $60/week.

(I modify the bake time and follow the principal of baking at 425F for 15 min. per pound of meat)

My meatball recipe:
Ingredients:
1 lb. ground pork
1 lb. ground beef
1 large eggs
1/2 C. parmesan cheese
1/2 C. breadcrumbs (or flour substitute)
1 Tbs. onion powder
1 Tbs. garlic powder
2 tsp. sea salt
1 tsp. pepper
Directions:
Combine all ingredients
Shape into meatballs about 1 1/2 Tbs.
Bake at 400F for 15 min., flipping meatballs half-way through
