Easy Plant-Based Meal Prep recipes Under 500 calories

Today I'm going to be sharing with you two easy plant-based recipes for vegan meal prep. These easy vegan recipes are focused on increasing vegan protein intake while staying on a plant based diet. These healthy recipes will help you keep on track with your vegan diet. These recipes are under 500 calories each! The full recipes are below, #veganmealprep #plantbasedrecipes #veganprotein
CARROT CAKE OVERNIGHT OATS
These measurements are for 1 serving. 3x the measurements for 3 servings
1/2 cup 40g oats
1 Tablespoon 10g ground flax seed
1 Tablespoon 10g hemp hearts
2 Tablespoon 16g shredded carrot
1/4 tsp cinnamon
1/4 tsp vanilla powder or 1/2 tsp vanilla extract
1 scoop Earth Chimp Vanilla protein powder
3/4 cup 180g unsweetened soy milk
1/2 small banana
1/4 cup 56g plain Greek soy yogurt
Add the first 7 ingredients into a bowl and mix well.
Add the soy milk and mix again.
place the lid on the bowl and refrigerate overnight.
In the morning slice the banana and add to the bowl and top with the yogurt
Calories 464, Protein 32g, carbs 54g, fat 16g, fiber 11g
LOADED SWEET POTATO TACOS WITH TVP
These measurements are for 3 sweet potato tacos
3 sweet potatoes approx 190g each
1 cup chopped onion
1 Tablespoon chopped garlic
1 cup TVP
1 cup warm water
3 Tablespoon taco seasoning
1/2 cup to 1 cup water
3/4 cup chopped tomato
3/4 cup shredded lettuce
1 lime
3/4 cup black beans rinsed and drained
1 tablespoon tomato paste
3/4 cup salsa
Pre heat oven to 400 degrees
Add the warm water to the TVP mix well and set aside.
Slice off the ends of the sweet potatoes to release the steam while baking and place on lined baking sheet and bake for 45 minutes or until soft.
Add 2 tablespoon water into a non stick skillet heat on medium heat.
Add the onion and cook for 3 minutes, add the garlic and cook for another 2 minutes adding water as needed. Add the TVP, taco seasoning, tomato paste and start with 1/2 cup water and mix well. Add more water if too dry. cook for another 3 to4 minutes on low.
Once the potatoes are done place each in a container and cut in half and fluff the insides of the potato a bit. Divide the taco mixture evenly over each potato. Add 1/4 cup of beans, tomato, lettuce and salsa to each potato and squeeze lime juice over all 3. Let cool and then cover and place in fridge.
