“Sole Bhat” is a traditional, aromatic, and spicy one-pot Maharashtrian rice dish, popular as a comforting meal preparation. It is essentially a pulao made with rice, a blend of spices, Vegetables and often fresh green pigeon peas (tuvar) which are widely available in the winter season. Green pigeon peas are beneficial for heart health, digestion, and immunity due to their high fiber, potassium, and vitamin C content. They can also help with weight management by promoting fullness, support blood sugar control due to a low glycemic index, and contribute to stronger bones. Additionally, they are a good source of plant-based protein.
“Kadhi” is a popular Indian yogurt-based curry, a tangy, creamy gravy made with buttermilk or curd and chickpea flour (besan), simmered with spices like turmeric, cumin, and mustard seeds, and often served with rice or roti.

3 चमचे भाजलेल्या कांद्याची पेस्ट
3 चमचे खोबरे पेस्ट
4 चमचे तेल
1/2 चमचा मोहरी
1/2 चमचा जिरे
4 चमचे तिखट
1 चमचा हळद
2 चमचा मीठ
1 चमचा धणे जिरे पावडर
1 चमचा कसूरी मेथी
चिमूटभर हिंग
खडे मसाले (तेजपान, इलायची, दालचिनी)

4 हिरव्या मिरच्या

3 spoons roasted onion paste
3 spoons roasted coconut paste
4 spoons oil
1/2 spoon black mustard seeds
1/2 spoon cumin seeds
4 spoons chilli powder
1 spoon turmeric
2 spoon salt
1 spoon Coriander cumin powder
1 spoon kasuri Methi
Pinch of asafoetida
Raw Masale (Bay leaf, cardamom, cinnamon stick)
