Meethi baingan:
Ingredients
Brinjal 300gm
Oil ½ cup
Mustard seeds ½ tsp
Fennel 1tsp
Carom ½ tsp
Fenugreek seeds ¼ tsp
Chopped ginger garlic 1tbsp
Onion chopped 1
Salt, black pepper, turmeric as required
Method:
Cut the Brinjal slices and fry in oil .now in second pan add ½ cup of oil and add chopped onion ,fenugreek seeds ,chopped ginger garlic and mustard seeds fry then add salt ,red chili powder ,turmeric , Carom and fennel mix and masala roast .then add green fenugreek add and leave on dum .now add roast fry bringal then add tamarind paste add and then leave on dum for 5 minutes .finally remove and serve .
Hyderabadi dum chicken:
Ingredients to marinate
Chicken 750gm
Ginger garlic paste 1-1/2 tbsp
Salt, black pepper, turmeric as required
All spice 1tsp
Nutmeg mace powder ½ tsp
Clarified butter ¾ cup
Green chilies 5-6
Rose petals 2tbsp
Paan stem 1piece
Onion ground / fried ½ cup
Yogurt 1cup
Almonds 8
Coconut 1tbsp
Cashew nut 8-10
Lemon juice 2tbsp
Mint 2tbsp
Green chilies 2tbsp
Coriander 2tbsp
Method:
Coconut, almond and Cashew nut lightly roast and grind it .now in chicken add grinded mixture and remaining all ingredients and leave for 3 to 4 hours .then chicken pour in pot and cook for 10 minutes on high heat .after this cook on low heat .when chicken tender then roast .then add green chilies ,mint and green coriander and serve .
Malka masoor ki daal:
Ingredients
Split red lentil 2cups
Garlic chopped 1tbsp
Green chilies crushed 1tbsp
Salt, black pepper, turmeric as required
Milk ½ cup
Chopped onion 1
Cream 2tbsp
Lemon juice 2tbsp
Ingredients to temper
Butter 2tbsp
Oil 2tbsp
White cumin ½ tsp
Garlic crushed 1tsp
Onion sliced 2tbsp
Method:
Split red lentil except cream and lemon juice all ingredients mix and add 4 cup of water and cook till than lentil tender .now mix well .then add lemon juice .for bhagar butter and oil heat then onion slices and crushed garlic fry .after this white cumin add and fry .finally ready bhagar with cream add in lentil and mix then serve it .
