Hearty Afternoon Tea Sandwiches

Roast beef with horseradish, cheese and ham, and a quintessential English combination known as cheese and pickle, all make for wonderful finger sandwiches for a hearty cold weather afternoon tea. Pair any of these with a bold tea for a very satisfying savory course.

ROAST BEEF SPREAD RECIPE

INGREDIENTS: (makes 6-8 full sandwiches)
Roast beef slices - 4.5oz / 126g [abt 6 slices]
Mayonnaise- 2Tb / 26g [more or less to taste]
Sweet pickle relish - 2Tb / 30g
Horseradish - 2 tsp / 10g
Red onion - finely chopped - 1 Tb / 3-4g
Crushed black pepper to taste
Softened butter for spreading
Wheat bread with crusts removed

DIRECTIONS:
Finely chop or grind in a food processor, the slices of roast beef.
Add the rest of the ingredients and mix into a well-blended spread.
Butter both slices of bread. Cover one slice with roast beef spread, making sure to get the spread all the way to the bread’s edge. Top with the other bread slice and cut into fingers.
