Warm, filling, nutritious, comforting, tasty - just a few of the words I would use to describe this dish. It is easy to put together but does take a little time. Most of that time is hands off so you’re free to do other things in the kitchen.
This dish can be doubled or tripled for a crowd or to add some meals to the freezer. It’s great to make a head and heat up the next day.
Gluten free with a simple swap of the flour and dairy free. Has been a while since I served this at the restaurant, but I will be serving it again soon! Make this for dinner and let me know what you think!
Chicken w/Okra
Serves 6
Ingredients
• ½ c butter
• 1 whole chicken, cut in pieces
• ¼ c flour
• 1 c chopped green onions
• 1 c trilogy
• 8 oz tomato sauce
• 2 c water
• 2 c stock
• 2 bay leaves
• ¼ tsp dried thyme
• 1 tsp each S&P
• 2 lbs sliced okra
• 1½ c uncooked rice
Directions –
Heat butter. Season chicken pieces to taste. Fry in butter on all sides till brown. Set chicken aside.
Add flour to drippings & stir for a light brown roux.
Stir in green onions & trilogy. Cook over low heat until soft, ~ 15 mins.
Add tomato sauce & cook ~5 mins stirring frequently.
Add water, stock, bay leaves, thyme, salt & pepper. Bring to a boil, lower heat to a simmer. Add chicken pieces & simmer ~15 minutes.
Add okra on top, don’t stir. Cook ~30 minutes until chicken & okra are tender.
Remove chicken, cool & debone. Return chicken meat to the pot. Toss lightly.
Serve over rice, cracked rice or pasta.

Cut up & season chicken. Label – Chicken 1
Mix green onions & trilogy. Label - Chicken 2
Mix water/stock, bay leaves, thyme, salt & pepper. Label – Chicken 3
