They’re not just cows, they’re magnificent and characterful creatures. The Tyrolean Grey cattle raised by Julia and Roland Hausegger are an old breed that has thrived on the Alpine pastures for over a thousand years. They are tolerant, robust and stoically calm. So much so, they’re happy to be led out to pasture by Pius, the four-year-old of the family.

Their milk is used to make the dessert 'Schneemilch' – snow milk. The Hausegger family serve up beef roulades, a ‘marende’ charcuterie platter and wild mushroom goulash.

Throughout the summer on high alpine pastures over the parish of Längenfeld, Martin Scheiber tends to the young stock. When Julia and Roland and their children trek up the slopes on a sunny Sunday, Martin serves them fluffy sugared pancakes, which he believes are superior when prepared at an altitude of 2,300 metres...
