INGREDIENTS:
For Roasting:
Brinjal – 1
Oil – 3 to 4 tbsp
Garlic cloves – 7 to 8 small sizes
Green chillies – 2
For brinjal Bharat
Roasted brinjal
Oil – 2 to 3 tbsp
Hing – ¼ tsp
Finely chopped garlic – 2 tbsp
Finely chopped coriander leaves
Finely chopped onion – 2 medium sizes
Finely chopped tomato – 1 medium size
Turmeric powder – ¼ tsp
Red chili powder – ½ tsp
Dry coriander powder – ½ tsp
Cumin powder – ¼ tsp
Kashmiri chili powder – ½ tsp
Chaat masala or amchur powder – ½ tsp
Homemade Goan garam masala – ¼ tsp
Hot Water – 3 to 4 tbsp
Salt to taste
METHOD/PREPARATION
Step 1: Roast brinjal.
Wash brinjal and completely dry it, put in 2 cuts, and add garlic and green chilies (as shown in the video). Grease oil to the brinjal with the help of a brush. Meanwhile, add 2 to 3 tbsp oil in the pan. Once oil heats, put brinjal and roast it from all sides till it properly cooks. (please refer to the video). Once, it is cooked and roasted completely. Remove from the pan and transfer it to the plate. Let it cool down completely. peel roasted brinjal skin slowly and the inside part is used to make brinjal Bharat.
Step 2:
Heat oil in pan, once oil heats. Add Hing, and chopped garlic and saute till its raw smell goes away, add chopped coriander leaves and chopped onion and saute till onion becomes translucent. Add chopped tomato and saute till it becomes soft. Now add all the dry masala powder (mentioned above) and saute on low flame for some time now add some water so that dry masala doesn’t burn. Cook masala sometime in water then add roasted brinjal mix well. Add salt to taste and again mix well. Cover and cook for 5 to 6 minutes on low flame. After 6 minutes open the lid and add finely chopped fresh coriander leaves. Mix well and serve with chapati, bread, or with rice and dal tadka.
