Ingredients:
Banana Curry:
7 Bananas (Green)
1 Onion (Medium)
6 Curry Leaves
1 Tomato
2 Dry Red Chillies
1/2 TSP Fenugreek Seeds
1 TSP Mustard Seeds
1 TSP Cumin Seeds
2 TSP Turmeric Powder
3 - 4 Garlic Cloves
3 TBSP Oil
Salt to taste
Jackfruit:
400 g Jackfruit (Note)
1 Big Onion
1 Tomato
1 TBSP Ginger & Garlic Paste
5 - 6 Curry Leaves
1/4 TSP Fenugreek Seeds
1/4 TSP Mustard Seeds
1/2 TSP Cumin Seeds
2 TBSP Masala Powder (Note)
3 TBSP Oil
Salt to taste
Note:
If you are using fresh jackfruit:
1. Peel, cut and wash the jackfruit.
2. In a pot, add water, jackfruit, 1/2 TSP salt and 1/2 TSP Turmeric
3. On medium high heat, bring to a boil.
4. Then reduce the heat, cover and simmer for 15 -20 minutes.
5. Once done, drain and set aside.
Masala Powder - In this video, we are using home made masala powder.
Using for Tamil curries, you need to use madras curry powder. You can find them at an open market (Bazar) in Mauritius.
Sautéed Green Beans:
500 g Green Beans
1 Big Onion
1 Tomato
1 TSP Ginger Paste
1 TSP Garlic Paste
1/4 TSP Fenugreek Seeds
1/4 TSP Mustard Seeds
1/4 TSP Cumin Seeds
1 1/2 TBSP Masala Powder
3 TBSP Oil
Salt to taste
