These espresso chocolate cookies have a soft, gooey center, crispy golden edges, and layers of chocolate and biscuit that melt perfectly in every bite.

🧈 Ingredients
113 g salted butter, softened (room temperature)
⅓ cup white sugar
½ cup brown sugar
1 large egg
1 tbsp vanilla extract
2 tbsp espresso (brewed or concentrated)
156 g all-purpose flour
½ tsp baking soda
8 biscuits
8 pieces dark chocolate
½ cup chocolate chips
👩🍳 Instructions
In a bowl, cream the butter with white and brown sugar until light and fluffy.
Add the egg and mix well until smooth and creamy.
Mix in vanilla extract and espresso until fully combined.
Sift the flour and baking soda into the mixture and gently mix until a soft dough forms.
Fold in the chocolate chips.
Cover the dough and refrigerate for 1 hour.
🔥 Assembling & Baking
Line a baking tray with parchment paper.
Place the biscuits on the tray.
Add one piece of dark chocolate on top of each biscuit.
Scoop cookie dough over the biscuit and chocolate (as shown in the video).
Bake in a preheated oven at 170°C (338°F) for 12–14 minutes.
Centers should be soft
Edges should be golden and crispy
Let cookies rest for 10 minutes, then enjoy!
💡 Pro Tip
For extra gooey cookies, slightly underbake and let them finish setting on the tray.
