“Er Ba Jiang” (literally “Two-Eight Sauce”) is a classic condiment on the dining tables of old Beijing, cherished for its unique flavor and rich history. The name “Er Ba Jiang” refers to a sauce made by blending sesame paste and peanut butter in a specific ratio. There are different explanations for the origin of its name: one suggests that it consists of 20% sesame paste and 80% peanut butter, while another claims the opposite—that it contains 80% sesame paste and 20% peanut butter.
During times of material scarcity, this sauce served as a substitute for pure sesame paste, satisfying people’s craving for a rich, nutty flavor while adding the subtle sweetness of peanuts. Beijingers often use Er Ba Jiang as a dipping sauce for hot pot (especially lamb) or as a dressing for noodles. Its rich, mellow taste and distinctive flavor have made it a beloved culinary memory for many.
