This is the full recipe: Day 1 poolish in: 3L water 3kg flour 5gr. yeast 10gr. honey.
Day 2 add on the poolish 11kg. flour (special strong flour), 5gr. dry yeast, 7 L water super cold, 300gr. salt, 1 cup olive oil total used during the process.
