When I smoked that whole pig, I knew I had to take the opportunity to try my hand at making some hog head cheese. I dropped the head and other pig parts in the pot and covered them with water.

I added the trinity, garlic, seasoning and hot sauce to the pot and boil for about one and one half hours. I pulled all the contents of the pot onto a sheet pan to cool. Once it was easy to handle, I pulled all the meat from the bones. I ran my knife through it and added it back to the pot.

I also added the green onions and fresh parsley, and let that cook down and simmer for 30 minutes before giving it a taste. After that, I started to taste to see what adjustments need to be made.

It had a good spice but needed a little salt, so I added it. I turn the fire off and get ready to fill my trays. I put the powerful pork mixture in the trays and let it cool on the counter, and then in the fridge overnight.

The next day I popped it from the trays and sliced it up. I served it with pork rinds, but you could serve it with crackers for your non-keto, non-carnivore, guests. This was such a fun cook and an amazing learning experience. I definitely plan on doing it again.
