Egg yolks make the cookies slightly crumbly with extra rich and buttery flavor. These popular Korean egg yolk cookies are a delightful addition to a cup of coffee or tea!
📋 Ingredients:
All-purpose flour - 1/4 cup + 2 tbsp (48g)
Almond meal/flour - 2 tbsp (12g)
Cornstarch - 1 tbsp (10g)
Unsalted butter, softened - 3 tbsp (42g)
Sugar - 1/4 cup (54g)
Large egg yolk - 3 (48g)
Vanilla extract - 1/2 tsp (3g)
Salt - 1/8 tsp
👩🍳 Instructions:
1) In a mixing bowl, beat the softened butter and sugar until light and fluffy, about 2 minutes.
2) Add in salt, egg yolks, and vanilla extract. Whisk until well combined.
3) Sift flour, almond flour, and cornstarch and mix until obtaining a nice soft dough.
4) Place the dough into a piping bag. Pipe 1-inch diameter circles of dough onto a parchment paper-lined cookie sheet.
5) Press down the egg yolk cookie dough with a lightly damp fingertip to have a smooth surface.
6) Preheat the oven to 320°F (160°C). Bake until edges of cookies are lightly brown, about 10-15 minutes.
7) Set aside to cool to room temperature.
