Today’s recipe is my favourite easy carrot bundt cake recipe! This carrot bundt cake is perfect for Easter, or any occasion really. How can you go wrong with a spiced carrot cake? Follow along with our short step by step video and learn how to make our easy carrot cake recipe today! I am using a small 8" pan, but you could easily double this recipe and use a full sized pan. Just increase your baking time by 10-18 minutes or until a toothpick comes out clean. Stay tuned for a new easy recipe each week!
Carrot cake ingredients:
1 C Flour
1/2 Tsp Baking powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
1 Tsp Cinnamon
1 Tsp Ginger
1/2 Tsp Nutmeg
1/2 Tsp Allspice
1/2 C Vegetable oil
2 Large eggs
1/2 C White Sugar
1/3 C brown sugar (packed)
1 C Grated carrots
Carrot cake directions:
Preheat oven to 350F/175C. Lightly butter and flour an 8" bundt pan. In a medium bowl combine flour, baking powder, baking soda, salt and spices. Whisk and set aside. In the bowl of a stand mixer or in a large bowl using a hand mixer combine your oil, eggs, and sugars. Mix on low for 2 minutes or until well combined. Add 1/2 of the dry mixture and mix on low until just incorporated. Add remaining dry mixture and mix until just combined. Add your carrots and fold in by hand. Pour into your prepared pan and bake 30-38 minutes or until a toothpick inserted comes out clean. Allow cake to cool 5 minutes then turn out onto a cooling rack to cool completely.
Easy glaze recipe:
1/2 C powdered sugar
2-3 Tsp milk
Easy glaze instructions:
In a small bowl whisk together powdered sugar and milk until you achieve your desired consistancy. Drizzle glaze over cooled cake and allow 2 hours to fully set. Enjoy!
