番茄红鸡
AYAM MASAK MERAH

材料：
鸡肉 650g
盐 半茶匙
黄姜粉 1茶匙

做法：
1。把盐和黄姜粉倒入鸡肉中搅拌均匀腌至少1小时。

辣椒糊材料：
微辣辣椒干 20条
蒜米 15g
红葱 10g
大葱 90g
香茅 10g
食油 适量

做法：
1。把所有的辣椒糊材料放进搅拌机搅成糊状。

材料：
桂皮 1支
八角 1粒
小豆蔻 2粒
辣椒糊
腌制鸡肉
辣椒酱 3汤匙
番茄酱 4汤匙
大葱圈 80g
辣椒 20g
番茄 2粒
清水 200ml
糖 3汤匙
盐 1茶匙

做法：
1。把腌制的鸡肉放入锅里用中火把鸡炸至金黄色捞起备用。
2。热锅烧油，加入少许蒜米红葱炒香后再加入大葱圈，辣椒和番茄翻炒片刻盛起备用。
3。锅里放少许油，加入桂皮，八角和小豆蔻炒香，倒入辣椒糊用小火把辣椒糊爆香至出油。
4。加入番茄酱和匙辣椒酱炒均匀，加入清水和炸鸡肉焖煮一下，再加入糖和盐调味。
5。最后倒入炒过的大葱圈，辣椒和番茄拌炒均匀就可以盛起享用了。

Chicken 650g

Turmeric powder 1 teaspoon

Method:
1. Pour salt and turmeric powder into the chicken and mix well. Marinate for at least 1 hour.

15g garlic
10g shallot
90g green onion
10g lemongrass

Method:
1. Put all the ingredients for chili paste into a blender and blend into a paste.

1 star anise
2 cardamoms
Chili paste
Marinated chicken
3 tablespoons chili sauce
4 tablespoons tomato sauce
80g green onion rings
20g chili
2 tomatoes
200ml water
3 tablespoons sugar
1 teaspoon salt

Method:
1. Put the marinated chicken into the pan and fry it over medium heat until golden brown. Set aside.
2. Heat oil in a pan, add a little garlic and shallot, stir-fry until fragrant, then add green onion rings, chili peppers and tomatoes, stir-fry for a while and set aside.
3. Put a little oil in the pan, add cinnamon, star anise and cardamom, stir-fry until fragrant, pour in chili paste and stir-fry over low heat until oil comes out.
4. Add tomato sauce and a spoonful of chili sauce and stir well, add water and fried chicken and simmer for a while, then add sugar and salt to taste.
5. Finally, pour in the fried green onion rings, chili peppers and tomatoes, stir-fry evenly and serve.
