Ingredients
2-3 Large Tomatoes (chopped)
5-6 Eddoes (peeled and sliced)
2 tbsp minced garlic
1 tbsp minced ginger
1/4 cup oil of choice (canola)
1 1/2 tsp red chilli powder
1 tsp turmeric
1 tsp salt
3 whole green chillies
Lemon/lemon juice
Water
Recipe
1. Prepare ingredients - chop tomatoes, peel, slice & rinse eddoes, mince ginger and garlic
2. Add 1/4 cup oil to pan over high heat, add minced ginger and garlic
3. Fry the ginger and garlic 3 minutes, add a splash of water to help prevent browning and burning
4. Add chopped tomatoes, red chilli peppers, turmeric, and salt and stir
5. Cook down tomatoes for 3 minute and then add eddoes & stir
6. Cook eddoes for 5 minutes
7. Lower to medium-low heat and simmer for 5 minutes or until eddoes are tender
8. Remove from heat
9. Garnish with cilantro and lemon juice
