Out of all the many many many episodes of "Good Eats" and its reload we watched and rewatched we've always been moved and touched by this incredibly perfect chicken parm. Alton, as always, approaches the many issues that can arise while facing this kind of labor intensive preparation with science: clearly the first problem is that you are working with extremely wet ingredients (tomato sauce) while trying to preserve the crispiness of others (chicken cutlets).
So, your first concern is to try to dehydrate the sauce, which is a pretty easy process.
Long story short: Alton's chicken parm is for sure worth the work, it's absolutely perfect, and it really (as you can see from the video) left us lost for words.
