🌾 Ulava Kattu (Horse Gram Curry) Recipe | Step-by-Step Process:
🧂 Ingredients:
Horse gram flour – 4 tbsp
Tamarind – lemon-sized ball (soaked & extracted)
Onions – 2, chopped
Garlic – 6 to 8 cloves, crushed
Green chilies – 4, slit
Curry leaves – a small handful
Urad dal – 1 tsp
Cumin seeds – 1 tsp
Mustard seeds – 1 tsp
Hing (asafoetida) – a pinch
Tomatoes – 1 to 2, chopped (optional but adds tang)
Turmeric powder – ¼ tsp
Red chili powder – ½ to 1 tsp (adjust to taste)
Salt – to taste
Oil – 1 to 2 tbsp
Water – as needed

👩🍳 Preparation Steps:
1. Prepare the flour mix:
In a bowl, mix horse gram flour with water. Stir well to form a smooth, lump-free mixture. Keep it aside.
2. Heat oil in a pan:
Add mustard seeds, cumin seeds, urad dal, and a pinch of hing. Let them splutter.
3. Add aromatics:
Now add crushed garlic, green chilies, chopped onions, and curry leaves. Sauté until onions turn soft.
4. Add tomatoes:
Once onions are cooked, add chopped tomatoes. Cook until they soften.
5. Add spices:
Add turmeric, red chili powder, and salt. Mix everything well.
6. Add tamarind & flour mixture:
Combine the tamarind water and the horse gram flour mix. Stir thoroughly and add this to the pan.
7. Simmer and cook:
Keep stirring to avoid lumps. Let it simmer on low flame until the raw smell disappears and it thickens slightly.
8. Serve hot:
Ulava Kattu is best enjoyed with hot rice, ghee, and a simple stir-fry on the side!
