Pasta alla carbonara with asparagus is a tasty and healthier variant of the classic carbonara. My mom prepares pasta carbonara with asparagus very often during the spring when wild asparagus are very abundant in Caserta (the Italian city where I am from).
I just want to clarify that this is not the recipe of the traditional pasta alla carbonara that it is with guanciale. My mum uses to call this dish pasta alla carbonara with asparagus and I do the same. As you can see from the video I still use a mix of egg yolks and cheese to make the pasta creamy. Here is my mom's recipe.
Ingredients for 2 servings:
7 oz (200 g) of asparagus
2 egg yolks
5.5 oz (155 g) of pasta
1.5 oz (40 g) of grated pecorino romano
½ Tbs of extra virgin olive oil
Salt to taste
Pepper as needed
*For traditional carbonara use 3 oz (90 g) of thinly sliced guanciale and no oil. Let the guanciale cook over low heat so the fat melts and guanciale fill fry in its own fat.
