200g (7.05oz) - Chinese Radish (Daikon), Grated & Soaked In Water
Seasoning To Taste
Rocket (Arugula) To Serve

1 1/2 Tbsp (30ml) - Cooking Sake
1 1/2 Tbsp (30ml) - Mirin
2 1/2 Tbsp (50ml) - Soy Sauce
1 1/2 Tbsp (30ml) - Rice Vinegar
Juice Of Half An Orange
1 - Garlic Clove, Crushed

Time - 1 1/2 Minutes Per Side
Temp - 50.c - 122.f
Medium Rare -
Time - 2 1/4 Minutes Per Side
Temp - 55.c - 131.f
Medium - (Not Recommended)
Time - 3 1/2 Minutes Per Side
Temp - 60.c - 140.f
Medium Well - (Not Recommended)
Time - 4 1/2 Minutes Per Side
Temp - 65.c - 149.f
Well Done - (Not Recommended)
Time - 6 Minutes Per Side
Temp - 70.c - 158.f

These cooking times are based on an average size and thickness. Each steak may weigh the same but its thickness can vary. Please keep a close eye on your meat and check regularly. For more accurate results, use a thermometer.
