Crispy on the outside, soft and jalidar on the inside — Methi na Gota are a winter favourite from Gujarat
Made with fresh seasonal methi, a perfectly rested besan batter, and fried golden to perfection.
Serve them hot with khatti-meethi kadhi and enjoy true street-style flavours at home.

Ingredients:
For Methi na Gota Batter :-
Gram Flour (बेसन) - 2 Cups
Rava (रवा) - 2 Tbsp
Water (पानी) - 3/4 Cup
Fenugreek (मेथी) - 1 CUP (Roughly Chopped)
Green Garlic (हरा लहसुन) - Handfull (Roughly Chopped)
Ginger & Green Chilli Paste | अदरक और हरी मिर्च का पेस्ट - 1 Inch Ginger & 3-4 Green Chillies
Ajwain | अजवाइन - 1/2 Tsp
Coriander Seeds & Black Pepper | धनिया के बीज और काली मिर्च - 1 Tbsp (Roughly Crushed)
Hing (हींग) - 1/4 Tsp
Salt As Taste | स्वादानुसार नमक
Baking Soda | बेकिंग सोडा - 1/4 Tsp
Lemon Juice | नींबू का रस - Half
Hot Oil (गरम तेल) 2–3 Tbsp
Method :
1. In a bowl, sieve the besan (gram flour) to remove any lumps and aerate the flour.
2. Add the fine rava (semolina) to the bowl. Now Gradually add water while whisking continuously to form a thick, smooth besan batter.
3. Whisk the batter well for 2-3 mins to incorporate air. This step helps make the gota to gain light and fluffy texture.
4. Now Cover the batter and let it rest for 10-15 Minutes.
5. After resting, add the chopped methi leaves and green garlic with the remaining ingredients to the batter & mix gently.
6. Now add the baking soda along with lemon juice to activate it. Once the baking soda is activated, mix the batter gently. This helps the gota achieve a street-style soft and jalidar (porous) texture.
7. Also add 2–3 tablespoons of hot oil to the batter and mix well. This step helps make the gota crispy on the outside while keeping it soft and moist inside.
8. Your Batter is Now Ready to Fry the Methi na Gota.
9. Now Once the oil is hot, scoop small portions of the batter from the side of the bowl and gently push them into the hot oil.
10. Fry the pakode on medium heat, turning occasionally, until they are evenly crisp, and cooked through.
11. Remove the fried Gota using a spider and transfer them to a sieve to drain excess oil.
12. Serve Hot with green chutney or khatti Meethi Kadhi with a Cup a Tea.
For Khatti Meethi Kadhi :-
Gram Flour (बेसन) - 2 tbsp
Sugar (चीनी) - 1 tbsp
Haldi (हल्दी) - 1/4 tsp
Lemon Juice (नींबू का रस) - Half
Water (पानी) - 1/2 Cup
Oil (तेल) - 1 tbsp
Mustard (राई) - 1/2 tsp
Asafoetida (हींग) - 1/4 tsp
Green Chilli (हरी मिर्च) - 1 nos
Curry Leaves (करी पत्ता) - 4-5 Nos
Water (पानी) - 1 Cup
Salt as Taste (स्वादानुसार नमक)
Method :
1. In a small bowl, add gram flour, sugar, turmeric powder, lemon juice, and ½ cup water. Mix well to form a smooth, lump-free mixture.
2. Heat oil in a pan or kadhai. Add mustard seeds, asafoetida, green chillies, and curry leaves, and saute until fragrant.
3. Now add 1 cup of water, mix everything well, and bring it to a boil
4. When the water starts boiling, stir in the prepared mixture. Reduce the heat and allow it to simmer gently.
5. Your khatti meethi kadhi is ready. Serve it hot with methi ka gota.
