KETO GREEK YOGURT MOUSSE |KETO|LOW-CARB | LCHF | GLUTEN FREE | SUGAR FREE
The story of this recipe is very peculiar, a few weeks ago we went out to dinner with some friends, we went to a restaurant where they know us well (because in that restaurant we had dinner the day we got married). I resumed the keto diet in 2020 in the middle of the pandemic, and it was more than a year that we did not go to this restaurant because until a few months ago all restaurants remained closed. Anyway, when it was time for dessert, I did not ask for dessert, because I knew it was full of sugar, however, the owners of the restaurant sent me a yogurt mousse, the truth it look delicious, and with a lot of willpower I gave it to my husband to enjoy it, but I was left with the thought, so for a week I searched and tested some recipes for yogurt mousse, but making it with 100% keto ingredients. Finally, this version of keto greek yogurt mousse was the one I liked the most, not only because of the delicacy of the flavor, because it completely respects the Greek yogurt flavor, but also because its consistency is delicate and creamy.
An important clarification, at the moment of whipping the cream, make sure it is well chilled.
For this recipe it is very important that heavy cream or whipping cream has at least 35% fat, if the fat is less than 35% the cream will not whip and the mousse will not have the desired consistency.
If you do not get a cream with a minimum fat content of 35%, you can remedy this in two ways.
1. add a little cream cheese to give density to the yogurt and cream mixture, I recommend adding 1 tablespoon at a time until you get the desired consistency and control the level of sweetness at the end. The only downside is that the flavor will be more cheesecake like than Greek yogurt, it will be more similar to a cheesecake mousse.
2. add a little gelatin/agar-agar, the consistency will not be the same as the original mousse but it is not an unpleasant consistency and the flavor will not be affected. Add 8 g of gelatin to the initial ingredients, moisten the gelatin with a little water and heat it up in the microwave until completely dissolved and free of lumps. Temper the gelatin by adding two tablespoons of the yogurt and cream mixture. Once the gelatin is tempered, pour it over the yogurt and cream mixture and mix well.

INGREDIENTS
40 g (1.4 oz) egg whites (approx. 1 large egg)
80 g (2.8 oz) of erythritol
20 g (0.7 oz) water
340 g (12 oz) Greek yogurt with maximum fat content
150 g (2.3 oz) heavy cream or whipping cream with at least 35% fat
1 teaspoon vanilla extract
