Homemade Chicken Feta Spinach Sausage - How to Make it Easy

This is my wife's favorite sausage she usually gets at Sprout's grocery store so I made it at home . It is easier to make than you think! I make it even easier by just grinding the meat once on the medium die right into the natural casings! Recipe is as follows:
Ingredients:
2.5 lbs boneless skinless chicken thighs
1 2/3 lbs boneless skinless chicken breast
10 ounces fresh spinach
2 tablespoons olive oil
2 tbs dehydrated onion
1 cup feta cheese
1 tablespoon kosher salt
2 tablespoons lemon pepper
2 tablespoons dried marjoram
12 feet of sausage casing
Cut chicken into small chunks less than 1 inch. set the chicken in the freezer for 1 hour to tighten it up. While waiting rough chop the spinach and add to a pan with the olive oil, onion, and 1/2 teaspoon of the seasoning mix. Just sweat the spinach and remove from heat. Make sure you soak the casing for 45 minutes in warm water. Remove chicken from freezer, add 1/4 cup water, remaining seasoning, the spinach, and the feta and mix thoroughly. Prepare the meat grinder with casing and run the meat through the grinder on medium grind directly into the casing. Link to your desired size. Wen done vacuum pack the links and sous vide them at 140 degrees for 1 hour to pasteurize. Cook immediately or freeze for later.
