The rose cake has its own purpose. It is suitable for any holiday, but it is especially recommended for Mother's Day, perhaps because of its floral shape, which is reminiscent of an affectionate tribute. In short, a romantic cake.
You will find the classic version here, but throughout the recipe there will be no shortage of ideas for adapting it to your tastes and whims.
Ingredients:
for a 9-inch round baking dish
Dough
500g / 17.63 oz strong flour (with at least 12% protein)
70g / ⅓ cup sugar
½ package instant dry yeast or ½ cube fresh yeast
180 ml / ¾ cup lukewarm milk
Pinch of salt
Vanilla and orange extract (optional, but recommended)
80g soft butter
1 egg
Filling
100 g / 3.52 oz soft butter
100 g / ¾ cup powdered sugar
To glaze
1 egg yolk
1 tbsp milk
To bake
Static oven, 180°C / 356 °F for 40 minutes
How to make it:
To make a rose cake, you need a standard brioche dough.
In a large bowl, put the flour (make sure it is "strong," with at least 12 percent protein). Make a puddle in the center and pour in the warm milk, yeast and sugar.
Using a fork, dissolve the yeast in the milk to form a thick base.
Add the salt, butter, egg and aromas. Knead a little at a time until the dough is smooth and elastic.
If it is too sticky, add a little flour; if it is too dry, add a few drops of water.
Form a ball, cover with a lid (or plastic wrap), and let rise in the bowl until doubled in volume.
Meanwhile, grease a 9-inch round baking pan and prepare the polishing mixture by mixing the egg yolks and milk.
Then, in a bowl, knead the softened butter with the powdered sugar for the filling.
When the dough has doubled in size, turn it out onto a floured surface and roll it out with a rolling pin (and your hands if necessary) into a rectangle less than 1 cm thick.
Spread the filling evenly over the rectangle and roll up from the long side to form a cylinder.
Cut the cylinder into 8 equal pieces. Close each piece slightly with your fingers, like the calyx of a flower.
Arrange the rolls in the baking dish: six around the edge and two in the center.
Brush with the egg yolk and milk mixture.
Turn on the oven to 180°C - 350°F. The rolls will continue to rise slightly as they heat.
Bake until golden brown on top, about 40 minutes.
Remove from the oven, let cool--and hide if you don't want someone stealing your roses!
When cold, dust with powdered sugar if desired.
