Ingredients
Lemon Sponge
• 1cup (120 g) all purpose flour
• 1/8cup (15 g) cornstarch
• 1 and 1/4 tsp baking powder
• 1/4 tsp salt
• 6 tbsp (85g) room temp unsalted butter
• 1/8 cup (30 g) vegetable oil
• 3/4 cups (150g) white granulated sugar
• 2 tbsp lemon zest
• 2 large eggs
• A lil less than 1/4 cup (50 g) room temp milk
• 1/4 cup (60g) plain yoghurt
• 1/8 cup (30 g) fresh lemon juice
Lemon Curd
• 1/2 tbsp lemon zest
• ⅓ cup + 1 tbsp (95 g) fresh lemon juice
• 6 tbsp(75 g) white granulated sugar
• 1/8 cup (15 g) cornstarch
• 1/3 cup (90 g) milk
• 1/4 tsp vanilla essence/extract
• 1/4 cup (55 g) cold unsalted butter
• A pinch of turmeric optional
Cream cheese frosting
• 112g (1/2 cup) softened room temp unsalted butter
• 100 g (1/2 cup) powdered sugar (Add more if you want sweeter)
• 1 tbsp lemon juice
• 1/2 tsp vanilla extract
• 200g cream cheese
