Ingredients:
Hogplum – 6
Salt to taste
For Uddamethi powder
Dry coriander seeds – 1 tsp
Methi seeds – ¼ tsp
Raw rice – ½ tsp
Udit dal – ½ tsp
Kashmiri chillies – 3
Goan dry red chillies – 3
For curry paste
Grated coconut – ½ coconut
Turmeric powder – ¼ tsp
Water as per requirement
For Tadka
Oil – 2 to 3 tbsp
Mustard seeds – 1 tsp
Udit dal – ½ tsp
Methi seed – ¼ tsp
Hing – ¼ tsp
Curry leaves
Method
Step 1:
Wash hog Plum or ambade, peel skin and add salt as per taste. Mix them and keep aside for marinate.
Step 2: for uddamethi powder
Dry roast all ingredients mentioned above till aroma releases. don’t over roast. Switch off the gas and transfer in a plate. allow to cool down completely. Add to grinder jar and make a fine powder. don’t add water.
Now add grated coconut, turmeric powder and water. grind to a fine paste. add water if required while grinding.
Step 3:
In a kadai, add oil once oil heats. add all ingredients mentioned above (tadka). Once mustard seeds pop up then add marinated hog plum and mix well in tadka and cook for some time. Now add coconut paste and add water to adjust consistency. mix well and cook for 10 minutes on low flame. keep on stirring in between. After 10 minutes add salt to taste, mix well and cook for 2 minutes more. After 2 minutes switch off the gas and serve.
Serve with steamed rice and bhaji or potato kappa perfect Goan veg lunch.
