Last month I went to Taiwan for onsen vacation in Wulai district and found that Taiwan have a very high quality of tea leaves. I bought one and tried to create some menu using tea leaves combine with white chocolate. And never forget to add in my Kinomi DNA. I will show you how Kinomi make a Triple chocolate bear Taiwanese milk tea ganache cake. Using ingredients as below.
◆ Colored chocolate
White = White chocolate
Black = White chocolate + Charcoal powder
Light yellow = White chocolate + Pumpkin powder
Green = White chocolate + Matcha powder
Brown = Milk chocolate
Red = White chocolate + Roselle powder
Pink = White chocolate + Strawberry powder
◆ Bear chocolate shell
Beige = White chocolate + Milk chocolate (5:1)
◆ Dark chocolate mousse filling
Gelatin 2g + Water 6g
Dark chocolate 50g + Heavy cream 50g
Whipped cream 100g
◆ Taiwanese tea ganache
Heavy cream 50g + Taiwanese tea leaves 4g
White chocolate 40g
Cold heavy cream 100g
◆ Taiwanese tea sponge cake
(for 4 inches cake mold 2 pcs.)
Milk 25g + Tea leaves 2g
Whole egg 100g
Cake flour 50g
Baking powder 1/2 tsp
Sugar 50g
SP 7g
Rice bran oil 35g
